Housekeepers & Butlers with Peter Brears

In today’s episode of The British Food History Podcast, I speak with Peter Brears, a world-leading food historian. He was director of both York and Leeds City Museums, and is a consultant to the National Trust, English Heritage and Historic Royal Palaces.

He is the winner of the André Simon award for his book, Cooking and Dining in Medieval England, published in 2012, which is a must-have, as are his other books in the series that focus on upper-class cooking and dining in the Tudor and Early Stuart periods, and most recently in the Victorian country house.

He is also a founding member of the Leeds Symposium of Food History and Traditions, which will have its 40th next year.

Our conversation was recorded in person at his home in Leeds.

We talk about the roles of the housekeeper and butler first in the Victorian period, but then trace their histories back right to the Middle Ages in the case of the butler. Also covered: orchestrating big meals, the drinks prepared by the butler, the mysteries of the stillroom, and the pressures of preparing a baked Alaska – amongst many other things.

Worcester Porcelain with Paul Crane

In this episode of the podcast, I talk with ceramics expert Paul Crane FSA about the early years of Worcester porcelain. Paul is a consultant at the Brian Haughton Gallery, St James’s, London, and a specialist in Ceramics from the Medieval and Renaissance periods through to the Eighteenth and Nineteenth Centuries. He presently sits as a Trustee of the Museum of Royal Worcester and is also a Fellow of the Society of Antiquaries, an independent historian and researcher and a Liveryman of the Worshipful Company of Art Scholars.

Our conversation was recorded in person at the Museum of Royal Worcester. Quick & Easy Puff or Rough Puff Pastry

I have to admit something: I have never made proper puff pastry. If a recipe calls for it, I buy some or make rough puff pastry instead, and I tell myself that I have neither the time nor the space to go ‘full-puff’. The truth, I think, is that I don’t have the inclination, otherwise I would have got around to it by now. Modern puff pastry is made by rolling out a rectangle of dough, then sitting atop it a square of butter, thoroughly beaten flat with a rolling pin. The dough is folded around the butter, the dough and butter are then rolled out, rotated 90 degrees, folded, then rested and chilled. This single ‘turn’ is repeated six more times to produce a laminated pastry dough containing 729 layers of butter.

Rough puff pastry, on the other hand, is not made with a single layer of folded butter, instead very cold diced or grated butter is used, a non-continuous layer of butter means that those great sheets of crispy pastry are not made, hence rough puff, or flaky, pastry. The process of making it is similar to puff, except there are fewer turns, though it still needs to be rested in the fridge between them. My method (see below) is much easier than this, however.

The differences and semantics break down if we hit the historical cookbooks because at one point all ‘puff pastes’ were what we would call ‘rough puff’ today. There are many stories and theories regarding who invented puff pastry and when, and they are either apocryphal or impossible to confirm. When it comes to British cookery books, the earliest example I can find is the late Tudor classic The Good Houswifes Jewel by Thomas Dawson (1596). Here, a dough made from flour, water, egg yolks and some rubbed-in butter, is rolled out, peppered with diced butter, folded and rolled. More butter is added after each turn. This basic method seems to remain the same for the next two-and-a-half centuries: Sarah Harrison (1751), Elizabeth Raffald (1769) and Eliza Acton (1845) all have puff pastry recipes just like it.[1] The first time I find a puff pastry recipe that uses a single layer of bashed-out butter is in Alexis Soyer’s classic A Shilling Cookery for the People (1855 edition).

I admit that my search was not a comprehensive one, but I think it’s safe to say that in recipes older than c.1850 if puff pastry is asked for, what we should be making is a rough puff.

Recipe

My recipe is based on a Jane Grigson’s for Quick, Foolproof Puff or Flaky Pastry, from her book English Food,[2] which is, in turn, adapted from a recipe by New York pastry chef Nicholas Malgieri. I’m not sure if it is foolproof, but it is by far the easiest method I know. The reason for this is that the cubes of very cold butter are mixed into the dough. As you roll and fold, you can see the cubes of butter eventually turn into large, flat discs within the dough. Very satisfying. Mixing the butter into the dough itself also means that the butter is evenly distributed and doesn’t end up leaching out of the sides.

I have given instructions to make this dough by hand, but you can use a machine. However, you must mix the ingredients very slowly and add liquid in a steady stream, so the lumps of butter don’t turn into breadcrumbs.

This type of rough puff pastry doesn’t need to be rested between rolling and folding unless it is very hot where you are, then you may need to pop it in the fridge for 15 minutes or so between turns.

This pastry only needs two ‘turns’ before it is ready for rolling and use, however, if you want a pastry that is just flaky, then do a third turn before rolling it out for use.

250 g strong white flour, plus extra for dusting

½ tsp salt

250 g very cold, unsalted butter, cut into 1 cm dice (approx.)

Juice of half a lemon

Water (see recipe)

Mix the flour and salt and add the butter, squashing the pieces between your thumb and forefinger, without rubbing them in or breaking them up.

Next, place a jug on a weighing scale add the juice from the lemon and then top up to a weight of 125 grams.

Stir in most of the liquid to form a ball of dough, using the remainder to pour on any dry-looking patches of flour.

Bring the dough together into a single mass and place on a well-floured worktop. It will look a right mess, but do not worry, it will neaten up in the rolling and folding stage.

Shape it into an approximate rectangle, then use a rolling pin to roll it into a large rectangle around 30 cm wide and 20 cm deep. Ensure you keep your work surface well-floured because the dough is quite sticky at first.

Now fold the sides into the centre of the rectangle and then fold it in half, so it looks a little like a book. Allow it to rest for 2 minutes.

Turn it 90 degrees clockwise and then roll it out again, roll it out thin enough to flatten the cubes of butter.

Fold up and roll out one more time, before wrapping in cling film and allowing it to rest in the fridge for 30 minutes, and roll out as required.

Negus

Wine, Cyder, Negus, Purl,[1] and Porter;

Are liquors for any Courtier.

The Free-Mason’s Calendar, 1776[2]

Merry Christmas everyone! It’s time for my annual boozy Christmas drink, and this year’s is so good, you can even give it to the kids; if you take Mrs Beeton’s advice (I advise against it, but what do I know). It is called negus; the ingredients are simple, and you are almost guaranteed to have them this time of year: wine, sugar, citrus fruit, spices. Easy.

Its origin lies with the English officer class of the late 17th and early 18th centuries, who got into the very sensible habit of watering down their wine to avoid getting too drunk of an evening. They still wanted something to drink though. It is named after Colonel Francis Negus (1660-1732), ‘a well-connected gentleman’, who, aside from being a noted member of the officer class, was also an MP, and a talented horse rider and hunter, so-much-so he was given the position of Master of the Horse and Warden of Windsor Forest. Quite the chap it would seem. The earliest description known comes in the form of a handwritten note in a 1725 edition of Tacitus’s works. It said: ‘After a morning’s walk, half a pint of white wine, made and hot and sweetened a little, is recond very good. – Col. Negus, a gentn. of tast, advises it, I have heard say.’[3] Initially it was a heated mixture of white wine and water, sugar and then some citrus juice, sometimes lemons, or sweet or Seville oranges, and it hasn’t really changed that much.

Its low alcohol made it especially good for the infirm or chronically ill. One Dr William Buchan in his 1797 book, prescribes claret negus for those with ‘Slow or Nervous Fever’, what we would call depression today.[4] In the book Oxford Nightcaps (1827), the author tells us that a doctor friend of his, a certain Doctor Willich, thinks ‘Negus is one of the innocent and wholesome species of drink especially if Seville oranges be added’. He also recommends lemons, cinnamon, cloves and all-spice. And calves’ foot jelly, which was thought very nourishing to those who couldn’t digest anything too rich or challenging.

Into the mid-19th century, negus settled down as a drink to be enjoyed by everyone, the wine most often used now being port (a drink which had been made popular since the Napoleonic Wars). It is mentioned in Charles Dickens’s A Christmas Carol (1843). When the Ghost of Christmas Past takes Scrooge to show him the wonderful parties put on by his old boss, the kind and caring, Mr Fezziwig: ‘There were dances, and there were forfeits, and more dances, and there was cake, and there was negus, and there was a great piece of Cold Roast, and there was a great piece of Cold Boiled, and there were mince-pies, and plenty of beer.’[5] What a sight they would have been!

So inoffensive was negus that it became a popular drink with kids, with Mrs Beeton informing us in 1861 that ‘[a]s this beverage is more usually drunk at children’s parties than at any other, the wine need not be very old or expensive for the purpose.’ Her proportions are 1 pint of port to every quart of water, plus a quarter of a pound of sugar, zest and juice of one lemon and some grated nutmeg. She adds: ‘Allow 1 pint of wine, with the ingredients in proportion, for a party of 9 or 10 children.’[6]

It’s essentially a weak version of my favourite hot-booze drink, smoking bishop, but child-friendly. Hm. I suppose it’s one way to get them to sleep on Christmas Eve night!

The recipe

Use whatever wine you prefer and your favourite citrus fruit. I went with port and a clementine and added some nutmeg and cinnamon. I must say it was very drinkable.

I’ve metricated the volumes, but the rule of thumb here is 1 part wine to 2 parts water, and you can sweeten the mixture to your taste.

Makes 1.3 litres:

400 ml wine (port, claret or white wine)

Zest and juice of 1 citrus fruit (lemon, sweet orange, Seville orange, clementine, etc)

Spices: ¼ freshly grated nutmeg, a snapped cinnamon stick, a teaspoon of cracked allspice berries or bruised cloves; choose your favourites.

800 ml boiling water

100 to 120 g caster sugar.

Heat the wine slowly with the zest and juice of your chosen fruit, and the spices until scalding hot (but not boiling). Add the hot water, then add sugar to taste. Pass through a sieve into a punch bowl or jug. To serve, ladle into beakers or cups.

One final note before I go: in Jerry Thomas and Christian Shultz’s How to Mix Drinks (1862), there is a very interesting-sounding soda negus recipe. The wine is warmed up with sugar and spices, then left to cool, then soda is added before serving.[7] Worth a try I think!

Edward Kidder’s Early 18th Century Mince Pies


This post complements the 2023 Christmas special of The British Food History Podcast called ‘Mince Pies’:


As promised on this year’s Christmas episode of the podcast, all about mince pies, here is my pastry recipe and method for making the shaped-mince pies in E. Kidder’s Receipts of Pastry and Cookery. It was originally published in 1721, but I used the 1740 edition of the book (here’s a link to the document). If you go to the end of the book, you will see lots of different minced pie templates, just like the ones below. The idea was that you rolled out your pastry and cut a shape out, then made pastry walls, filled them with mincemeat, placed on lid on top and baked it. Really beautiful, but fiddly-looking shapes, I’m sure you’ll agree.

I felt a little nervous making them, so let me at this point, say a massive thank you to Ivan Day for the advice he gave me on shaping these pies. Ivan has an excellent blog with a fascinating article about mince pies (click this link to read it).

In the Christmas episode, I considered making some of the pie designs in Robert May’s The Accomplisht Cook (first published in 1660), but I found Edward’s designs much easier to extrapolate into three-dimensional pies! However, here are a few from May’s book to give you an idea of the sorts of minced pies he was making:

The Materials

The first thing you need to do is get organised with your templates. I simply took screenshots of the book, printed them out and cut them out. You can make them any size you like. My shapes were around 10cm wide, and I went for the ones that looked the easiest!

Then you need the correct tools for the job. I have collected over the years various pastry tools, both antique and modern. The wheels are called jiggers, which are used for cutting pastry. The antique ones usually come with a crimping tool attached, and these are used to fuse two pieces of pastry. The one I own with what looks like a flat pair of tweezers was particularly helpful for the pies I made here. I used a paring knife to cut out the shapes – the jiggers weren’t appropriate for these smaller pies.

Jiggers do come in handy for cutting out the pastry walls – essentially strips of pastry – I have a tool that’s made up of 5 jiggers on one expandable frame so you can cut several strips of the same thickness in one go.

That’s the tools of the trade, but now let’s look at our ingredients: we need mincemeat (I used the lamb mincemeat, recipe here) but you can use any you like.[1] Then we need some pastry that is mouldable (we don’t want the walls collapsing in the oven!) yet edible.

Mouldable Hot Water Pastry

I came up with the following recipe, based on one given by Jane Grigson in English Food.[2] It’s very good for moulding, but not particularly delicious, I made a few changes and I think it’s pretty good. It is simple to make, and this was enough for 8 to 10 pies, depending upon how large your templates are (you could, of course, make one large one!)

500 g plain flour

125 g salted butter, diced

125 g lard, diced

75 ml hot water

2 tbs icing sugar

First, rub the butter into the flour until it resembles breadcrumbs. Put the lard in a saucepan and pour the hot water over it. Heat gently, but be careful – you don’t want it to boil and splutter. Stir in the icing sugar and when it is dissolved, make a well in the centre of the flour-butter mixture and pour into it three-quarters of the hot liquid. Cut the liquid in with a knife, then pour the remaining hot liquid to pour over any dry patches that remain. Once all of the water has been added, give the pastry a knead (leave it to cool a little if you need to). It should be smooth, pliable and waxy. Cover with cling film and allow to cool completely, but do not refrigerate.

Constructing the Pies

Now you can roll out a third of the pastry thinly – aim for the thickness of a pound coin, 2 to 3 millimetres – and cut out your bases. Now roll out another third into a long strip, long enough to go around the perimeter of your shapes. To do this, use a piece of string to trace around the shape. When the appropriate length, use a ruler to cut your strips at your desired thickness. I went for 2 cm, but I could have gone thicker than that, I think.

Now the fiddly bit: brush the edges of the bases with plain water and glue the sides on. Use your finger and thumb to pinch them together, and then crimp them with a crimper tool if you have one. Repeat with all of your shapes and place in the fridge for a few hours to firm up. When firm, roll out the final third of the pastry and cut out your lids.

Fill your pies with your chosen mincemeat, brush the rims of your pies with water and fix on the lids in the same way as you did the bases. Make a steam hole and place back in the fridge for 30 minutes to firm up again. Meanwhile, preheat your oven to 200°C.

If you like, brush your pies with an egg wash before you bake them for 25 minutes, or until a good golden-brown colour. If you are making large pies, turn the heat down to 175°C and cook longer: you should see or hear the filling bubbling, telling you it is ready!

Book review: A. Cook’s Perspective by Clarissa F. Dillon & Deborah J. Peterson

A. Cook’s Perspective is an investigation into the work of the rather obscure and eccentric 18th-century cook and cookery writer Ann Cook, her methods and her infamous hatred of the popular cookery writer, and her contemporary, Hannah Glasse and her book The Art of Cookery Made Plain and Easy. The book is essentially a transcript of Cook’s Professed Cookery garnished liberally with comments and insights into Ann and Hannah’s recipes, their cooking methods as well as Ann’s state of mind. The book is authored by experienced food historians and historical cooks Clarissa F. Dillon and Deborah J. Peterson who investigate Cook’s spleen-venting by cooking her and Hannah’s recipes to understand whether Cook’s vitriolic take-down of Glasse has any grounding.

A. Cook’s Perspective is a very useful book – firstly because it’s an edited transcription of Cook’s work (including her bizarre preface which attacks Hannah Glasse in rhyming couplets and long-form poetry) which is very handy for those who prefer to read a book over a digitised PDF. But the book adds so much more than that because Dillon and Peterson really get to work on fact-checking and inspecting the minutiae of Cook’s methodologies by making the recipes themselves – and it’s a mixed bag, sometimes landing in favour of Cook, other times Glasse. Their work also exposes Mrs Cook as a vindictive, petulant, embittered woman, and it gives this reader more insight into the bizarre one-sided acrimony (it is unknown whether Hannah Glasse ever met, or even knew, Ann Cook) which I had previously thought was generally in agreement of Cook’s assessment. The reality is – as usual – much more complex. Having a physical book in my hand allowed me to read Cook’s work more closely (something difficult to do when reading digitised texts online), and it shed light on the evolution and pedigree of some dishes. For example, I spotted elements of Cook’s recipe ‘To make a White Fricassey of Rabbets’ in Elizabeth Raffald’s recipe ‘Rabbits Surprized’, a dish I thought to be totally unique to Raffald.

Dillon and Peterson’s approach of writing comments beneath original prose is a good one: it helps us to understand how some recipes work, and how the writers go about interpreting them. They also demonstrate the importance and benefit of cooking the recipes oneself, rather than simply reading them. There are several occasions too where the authors are at a loss as to Ann’s meaning or point in some of her comments, many of which seem to be nonsensical or simply ‘whining’. By criticising Ann Cook’s own criticisms we do glean an extra layer of understanding of 18th-century cooking.

As someone with an interest in the cookery writers of the 18th century, I would have liked to have seen the introduction, i.e. the backstory, fleshed out a lot more: the two ladies’ biographies, achievements and inter-relatedness. Photos of the food would have helped bring the dishes to life, as would some images, say contemporary artwork, of 18th-century foods being served or prepared.

Overall, A. Cook’s Perspective is a worthy addition to the home library of anyone interested in 18th-century cookery because it provides us with practical knowledge of cooking at this point in history, but it also gives us an almost voyeuristic view of Ann Cook’s psyche and her deep-seated, intense dislike of a cookery icon at a time when the personal thoughts and feelings of female cookery writers are so rarely captured.

To Make Butter Sauce (aka Good Melted Butter)

If you leaf through English cookery books of the 18th and 19th centuries, you will see much mention of ‘melted butter’ or ‘good melted butter’, such as this one, a recipe for egg sauce from Elizabeth Raffald’s The Experienced English Housekeeper (1769)[1]:

You would be completely forgiven if you took those words literally, however, what Elizabeth is referring to is butter sauce, ‘or’, as one-time chef to Queen Victoria Charles Elmé Francatelli put it, ‘as it is absurdly called, melted butter’.[2] It achieved this misleading moniker simply because of its ubiquity. In fact, it was so ubiquitous that Mrs Raffald doesn’t even include a recipe for it. Luckily for us, Hannah Glasse does in Art of Cookery[3]:

Used freely across three centuries, it became known as the ‘one sauce’ of England. The recipe, at least in its constituents, doesn’t really change: it is essentially a thin roux made with flour and water (or stock), enriched with melting cubes of butter, essentially a beurre blanc stabilised with flour – very useful for a sauce that was potentially left standing on a dining table for an hour. Jane Grigson likened it to a hollandaise thickened with flour instead of egg yolks.[4] It can certainly be used in place of either. Butter sauce forms the basis of several other sauces, it can be sharpened with lemon juice, enriched with cream, or flavoured with herbs. Sometimes it is flavoured with shellfish, and even gooseberries if it is to be served with mackerel.

Like many of our common foods, they are mistreated, corners are cut and fillers are added. As Francatelli observed, ‘it is too generally left to assistants to prepare as an insignificant manner; the rest is therefore seldom satisfactory.’[5] Indeed, my first meeting with it was back in the 1980s in the form of a boil-in-the-bag frozen cod steak in butter sauce. I certainly enjoyed it at the time, but upon making a ‘proper’ one decades later for my Neil Cooks Grigson blog,[6] I immediately saw that the sauce I had consumed as a child was a shadow of its former self. Writing in English Food at a time when the hold nouvelle cuisine had on the restaurant scene was beginning to wane, Jane Grigson hoped we might return to this sauce and appreciate it again.[7] We didn’t, but perhaps now is the time?

My recipe, below, is adapted from Jane Grigson’s, which in turn, is adapted from Francatelli’s, so it has quite the pedigree. The only significant change I have made is to reduce the amount of flour. I’ve tinkered with amounts so that a full 250g pack of butter is used; no messing about with weights (and there is something quite satisfying about using a whole block of butter). Don’t let any memories of bad school meals put you off, and don’t let the amount of butter put you off either, it’s a surprisingly light and delicate sauce.

It’s simple to prepare, as long as you don’t let the diced butter become hot enough it melts fully. I love this sauce served with steamed vegetables such as asparagus, purple sprouting broccoli, leeks or new potatoes, as well as simple poached eggs, sole or salmon. If you have some poaching liquid or stock, it can replace the water used in the recipe.

I’ve provided some simple, classic variations below should you fancy trying them.

Serves 4 to 6:

250g very cold unsalted butter, diced

2 level tsp plain flour

120ml hot water

Salt

Ground black pepper

Pinch nutmeg and mace (optional)

Squeeze lemon juice

2 tbs cream (optional)

Put around one-third of the butter in a saucepan over a medium-low heat and allow it to melt, then stir in the flour with a wooden spoon, or better a small whisk, and allow to cook gently for a couple of minutes – on no account let it brown. If the flour fries and clumps a little, don’t worry. Now mix in the hot water by degrees, only adding more when the water in the pan has fully mixed into the flour and butter. Season with salt, pepper and nutmeg and mace, if using. Allow to gently simmer for 6 or 7 minutes over a low heat. Take the pan off the heat and let it cool for 2 minutes.

Now start beating into the sauce 3 or 4 cubes of butter so that they slowly melt and amalgamate into the sauce. Only when the cubes have disappeared, should you add more. Once you have done this a couple of times, the sauce will cool and the cubes won’t melt so easily, so put the pan over the lowest heat possible, and then continue to add more.

When the butter is used up, add a small squeeze of lemon, stir and check for seasoning. If you like, add cream.

Serve the sauce in a warm jug, or pour over vegetables or fish.

Variations:

Parsley sauce: add a tbs of finely chopped parsley. Eat with some delicately poached cod and stick two fingers up to Captain Birdseye.

Caper sauce: add a tbs of capers, whole or chopped. If you like, season with a little wine vinegar instead of lemon juice. A more piquant sauce to eat with richer foods: skate, brains and poached lamb or mutton.

Egg sauce: make the sauce as above, but when it is ready add the mashed yolks of 3 hard-boiled eggs and then the whites finely diced. Traditionally this is eaten with salt cod and parsnips in Lent.

Shrimp sauce (possibly the most delicious variation). Use a good handful of cooked brown shrimp in their shells (if you can get them) or small prawns. Remove the shells, and boil them in the water to make a rich stock. Use this instead of water. When the sauce is ready, stir in the shelled prawns or shrimps. This is delicious poured over poached turbot. You can also make this sauce with crab or lobster.

Wigs / Whigs / Wiggs / Whiggs

Wigs – whichever way you spell them – were a type of enriched, leavened teacake. They reached a peak in popularity in the eighteenth century but may have been cooked up as early as the fifteenth.[1] It seems that they were eaten up until 1900,[2] though as with many foods, they changed their form somewhat.

Elizabeth Raffald included a recipe ‘To make Light Wigs’ in her 1769 book The Experienced English Housekeeper,[3] so I thought I would devise an updated recipe for them using modern kitchen equipment, weights and measures.

This is her recipe taken from the first edition:

As is often the case, her recipes are a mixed bag of precision and vagueness, and this one is no different: we have proportions – the most important thing, I suppose – but little else concerning mixing, shaping and baking. And what are the seeds she mentions? Luckily, by cross-referencing other recipes and others’ research, we can build up a good idea of what they were like.

Let’s dissect the recipe sentence by sentence:

  1. First of all, we have to make a simple dough of flour, milk and barm and prove it somewhere warm. Barm is the frothy yeast skimmed from fermenting vats of beer; it is from here we get our leaven. The bubbles of gas in low-gluten flour doughs with little elasticity (as would have been the case here) tend to pop quickly, so we have to assume that the dough was kneaded to develop what gluten was present.
  2. Once proved, add the butter and sugar. It’s very common, even in modern recipes, to add the enriching ingredients after the first prove. Ingredients such as these get in the way of entangling gluten strands, and their heaviness slow proving even further. These days however with our robust fast-action yeasts, I find dough rises well with all of the ingredients mixed right from the start – though I hedge my bets a little by using a mix of plain and strong white flours.
  3. Elizabeth tells us to ‘make it into Wigs’ which isn’t useful for those of us in the twenty-first century. It does inform us that they were common enough in 1769 for Elizabeth to assume we would all know the correct shape. Another recipe given in Florence white’s Good Things in England says to make wigs ‘into any shape you please’.[4] Elizabeth David helps us out here by spotting that the word wig comes from the Dutch weig, meaning wedge-shaped.[5] She thinks the round of dough would be split into sixteenths, but I think sixths or eighths would be better.
  4. As for the seeds; all other recipes state caraway seeds for wigs. I like them so much I put them in and on the dough before baking.

There are richer versions of this basic recipe. Hannah Glasse’s ‘light Wigs’ are very similar to Elizabeth’s, but she also includes a richer version (‘very good Wigs’) containing egg, cream, spices and sack.[6] Some recipes ask you to egg wash the wigs and sprinkle coarsely crushed lumps of sugar over them.[7] I opt for a milk wash and granulated sugar.

Wigs can be eaten buttered, and when cold eat like very sweet scones, when warm they are softer and stodgier, though not in a bad way. Elizabeth suggests toasting them and pouring stewed cheese over them – a recipe for which can be found in my book Before Mrs Beeton.

My recipe makes 1 round that can be divided into 6 or 8 wigs:

5g/1 tsp yeast

5g/1 level tsp salt

180g strong white flour

180g plain white flour

120g caster sugar

1 tbs caraway seeds

120g softened salted butter

200ml warm milk, plus extra for brushing

A smear of sunflower oil

Granulated sugar for sprinkling

In a bowl, mix the yeast, salt, flours, caster sugar, and most of the caraway seeds (keep a few behind to sprinkle on the top). Make a well in the centre and add the butter and milk. Mix preferably with the dough hook of a food mixer, if not a wooden spoon – the mixture is very sticky indeed, a good 7 or 8 minutes, or until the dough is smooth.

Oil a clean bowl and place the dough inside. Cover and allow to prove in a warm place for between 60 and 90 minutes. The dough is so enriched that it doesn’t double in volume like regular bread or bun dough, but it does need to have increased in volume noticeably.

As you wait, line a 21 cm/8 inch cake tin with greaseproof paper. Elizabeth asks us to shape the wigs ‘with as little Flour as possible’, but I find that a good strewing of flour is best. The dough needs to be brought into a tight dough ball; again not as tight as is usually possible, due to all of that sugar and butter. I find a couple of dough scrapers helped a great deal at this point.

Once gathered, plop the dough into the lined tin, cover and allow to prove for 30 to 45 minutes. Using a well-floured dough scraper split the dough into 6 or 8 wedges.

When the proving time is almost up, preheat your oven to 175°C and place an ovenproof dish at the bottom of the oven. When the wigs are ready to go in, put the kettle on. When boiled, finish preparing the wigs by brushing the top with milk and scattering the reserved caraway seeds and a little granulated sugar over the top, then place on a baking tray.

Open the oven door, slide the wigs onto the centre shelf, then gingerly pull out the hot ovenproof dish and pour in a good amount of hot water, then quickly but carefully slide it back in and close the oven door.

Bake for around 45 minutes until well-risen and golden brown on top. Cool on a wire rack in its tin. Serve cold or warm with butter and sliced or toasted cheese.

The book charts Elizabeth’s many achievements and life events, the best known being the publication of her influential cookery book The Experienced English Housekeeper in 1769 – but there are many, many others. Her life was a dramatic one: starting life in domestic service, she rose to fame and fortune and transformed Manchester’s business community, before a tumultuous fall. Her book outlived her, but its popularity had a great rise and fall too.

I discovered Elizabeth via Jane Grigson, and it is these two food writers who have been my biggest, and most constant inspiration through 15 years of researching and cooking British food, and I am so happy to be the one to write Elizabeth’s biography.

Mrs Beeton’s name is in the title for a variety of reasons, the main one of which being that it is Elizabeth – a full century before Beeton and her book – who defined what we think of today as traditional British food, not Isabella Beeton, yet it is Beeton who is placed on that pedestal.
