New book ‘The Philosophy of Puddings’ out 24 October 2024

I’m very excited to announce that my next book The Philosophy of Puddings with be published on 24 October 2024, published by the British Library – part of their excellent The Philosophy of… series.

The word ‘pudding’ is a confusing one if you are not from the British Isles because so many things can be a pudding: steamed sponge, Christmas pud, sticky toffee pudding, plus black and white pudding AND haggis. Add to this the fact that pudding can also be a byword for any dessert. Convoluted craziness.

I have tried to tackle the tricky etymology of the word before – puddings change and morph into so many different things across time that it’s pretty mind-boggling, and I’m so glad to have the opportunity to really study it in depth: a dream come true really. As far as I know there isn’t a book that tracks the word right through history, focussing not just on trends and fashions but also why puddings are so important in British identity.

Quick & Easy Puff or Rough Puff Pastry

I have to admit something: I have never made proper puff pastry. If a recipe calls for it, I buy some or make rough puff pastry instead, and I tell myself that I have neither the time nor the space to go ‘full-puff’. The truth, I think, is that I don’t have the inclination, otherwise I would have got around to it by now. Modern puff pastry is made by rolling out a rectangle of dough, then sitting atop it a square of butter, thoroughly beaten flat with a rolling pin. The dough is folded around the butter, the dough and butter are then rolled out, rotated 90 degrees, folded, then rested and chilled. This single ‘turn’ is repeated six more times to produce a laminated pastry dough containing 729 layers of butter.

Rough puff pastry, on the other hand, is not made with a single layer of folded butter, instead very cold diced or grated butter is used, a non-continuous layer of butter means that those great sheets of crispy pastry are not made, hence rough puff, or flaky, pastry. The process of making it is similar to puff, except there are fewer turns, though it still needs to be rested in the fridge between them. My method (see below) is much easier than this, however.

The differences and semantics break down if we hit the historical cookbooks because at one point all ‘puff pastes’ were what we would call ‘rough puff’ today. There are many stories and theories regarding who invented puff pastry and when, and they are either apocryphal or impossible to confirm. When it comes to British cookery books, the earliest example I can find is the late Tudor classic The Good Houswifes Jewel by Thomas Dawson (1596). Here, a dough made from flour, water, egg yolks and some rubbed-in butter, is rolled out, peppered with diced butter, folded and rolled. More butter is added after each turn. This basic method seems to remain the same for the next two-and-a-half centuries: Sarah Harrison (1751), Elizabeth Raffald (1769) and Eliza Acton (1845) all have puff pastry recipes just like it.[1] The first time I find a puff pastry recipe that uses a single layer of bashed-out butter is in Alexis Soyer’s classic A Shilling Cookery for the People (1855 edition).

I admit that my search was not a comprehensive one, but I think it’s safe to say that in recipes older than c.1850 if puff pastry is asked for, what we should be making is a rough puff.

Recipe

My recipe is based on a Jane Grigson’s for Quick, Foolproof Puff or Flaky Pastry, from her book English Food,[2] which is, in turn, adapted from a recipe by New York pastry chef Nicholas Malgieri. I’m not sure if it is foolproof, but it is by far the easiest method I know. The reason for this is that the cubes of very cold butter are mixed into the dough. As you roll and fold, you can see the cubes of butter eventually turn into large, flat discs within the dough. Very satisfying. Mixing the butter into the dough itself also means that the butter is evenly distributed and doesn’t end up leaching out of the sides.

I have given instructions to make this dough by hand, but you can use a machine. However, you must mix the ingredients very slowly and add liquid in a steady stream, so the lumps of butter don’t turn into breadcrumbs.

This type of rough puff pastry doesn’t need to be rested between rolling and folding unless it is very hot where you are, then you may need to pop it in the fridge for 15 minutes or so between turns.

This pastry only needs two ‘turns’ before it is ready for rolling and use, however, if you want a pastry that is just flaky, then do a third turn before rolling it out for use.

250 g strong white flour, plus extra for dusting

½ tsp salt

250 g very cold, unsalted butter, cut into 1 cm dice (approx.)

Juice of half a lemon

Water (see recipe)

Mix the flour and salt and add the butter, squashing the pieces between your thumb and forefinger, without rubbing them in or breaking them up.

Next, place a jug on a weighing scale add the juice from the lemon and then top up to a weight of 125 grams.

Stir in most of the liquid to form a ball of dough, using the remainder to pour on any dry-looking patches of flour.

Bring the dough together into a single mass and place on a well-floured worktop. It will look a right mess, but do not worry, it will neaten up in the rolling and folding stage.

Shape it into an approximate rectangle, then use a rolling pin to roll it into a large rectangle around 30 cm wide and 20 cm deep. Ensure you keep your work surface well-floured because the dough is quite sticky at first.

Now fold the sides into the centre of the rectangle and then fold it in half, so it looks a little like a book. Allow it to rest for 2 minutes.

Turn it 90 degrees clockwise and then roll it out again, roll it out thin enough to flatten the cubes of butter.

Fold up and roll out one more time, before wrapping in cling film and allowing it to rest in the fridge for 30 minutes, and roll out as required.

Forgotten Foods #9: Carrageen Pudding

This pudding has been on my ‘to post’ list for absolutely ages. It has become of my favourites, though as you will discover as you read the post, not everyone agrees with me. I’ve called it a forgotten food, but it is still well-known in Ireland. It was popular in many parts of England too, but it doesn’t seem to get made anymore. Carrageen pudding is a set dessert akin to jellies, blancmanges and flummeries, but it is made from the gelatinous seaweed carrageen, also known as Irish moss. It used to be gathered in Yorkshire and South-West England, going by the name ‘Dorset Moss’.1

I first made it in 2015 as part of one of my semi-regular Pud Clubs; I always liked to make one risky pud, and carrageen pudding was it. I flavoured it the traditional way with sugar, lemon and brandy. I didn’t particularly like the taste: there was something of a Lemsip about it. If I remember rightly, it was voted worst pudding of the day. However it wasn’t the flavour that put people off; it is more gummy than a gelatine set dessert, and doesn’t dissolve cleanly in the mouth. As John Wright puts it: it doesn’t have an acquired taste – it barely has any  – ‘more of an acquired texture.’2 That particular Pud Club was the closest I’ve seen anyone get to vomiting at one of my paid food events.

I returned to it later in the year after I’d had the idea for a seaside-themed popup restaurant, and though I could use it in the dessert course. I refined the recipe, adding some whipped cream to give it a mousse-like texture and flavoured it with elderflowers. I combined it with a gooseberry sherbet, and I was pretty pleased with it.

What is carrageen?

Carrageen is a common seaweed found throughout the coasts British Isles, except for parts of Lincolnshire and East Anglia.2 It is found in rockpools, is branched and a dark red colour. The wonderful food writer Theodora Fitzgibbon describes it as ‘a branching mucilaginous seaweed found on all rocks in Ireland’, which does not sound appetising, I realise. She goes on the comfort the reader, telling us that ‘it does not taste at all marine when properly prepared.’3 It is picked and dried in the sun, typically in April and May, and during the process it lightens from a dark red-brown to a creamy brownish beige, tinged with a pink-red hue.

To prepare carrageen, it is reconstituted in cold water, drained and then simmered in fresh water. It quickly turns viscous, bubbling away like the contents of a witch’s cauldron. The gloopiness is caused by the release of a trio of closely-related carbohydrates together called carrageenan.2 To extract it properly, the whole lot has to be squeezed through some muslin (cheesecloth). These carbohydrates are not digested by the body, and are therefore an excellent source of soluble fibre. Indeed, carrageen has been used as a treatment for a range of stomach and digestive complains and it ‘is considered extremely salutary for persons of delicate constitutions’.4 Its viscosity also made it a common treatment for sore throats and chest complaints. It also ‘fills plaster pores, makes wallpaper dressings…and fixes false teeth.’1

Today carrageenan is commonly found in factory foods. For example, fat-free yoghurts no longer able to set properly are thickened with carrageenan. It is perfectly safe to eat, but foods that contain it should be avoided, because its inclusion is a dead giveaway that the food has been highly processed. Eat your yoghurt lipid intacta.

Don’t let my previous description put you off making this dessert; I really think I have the recipe right. The texture is good and is certainly better than using cornflour to set desserts.

Blue Cheese Ice Cream with Poached Pears

As I promised in my last post, I have a second cheese recipe for you that uses a traditionally-made British cheese. Harvey & Brockless sent me a whole loads of excellent cheeses and other goodies, and tucked in there was probably my favourite British blue cheese, Isle of Wight Blue:

It’s strong, yet mellow and very creamy. Nothing like a Stilton at all (I love a good Stilton too, of course).

This is exactly the sort of cheese Professor Peter J. Atkins and I were talking about in my podcast episode about the British cheese industry, and how there is a resurgence in traditional styles and methods: softer cheeses made in small batches in small farms – before the behemoth that is Cheddar came along!

This cheese, because of its blue cheese flavour, low acidity and smooth consistency, is perfect to make into an ice cream. Cheese ice creams used to be popular, hitting a peak in the Regency period: indeed, the Prince Regent himself tucked into Parmesan cheese ice cream. My ice cream, like Prince George’s, is sweetened, but it is not over-sweet. It’s very simple to make – a case of mixing soft cheese into some cream and sugar. A curdy, hard or crumbly cheese would not work here.

I’ve combined it with a dessert classic: pears poached in red wine. There’s a recipe in Forme of Cury for it, so it really does have quite the vintage. The poaching wine is sweet and spiced and is reduced to a delicious, tart and slightly fiery spooning sauce. On the side: a nice digestive biscuit.

This is a well tried-and-tested recipe: it’s popped up on restaurant and pop-up restaurant menus in the past, but I originally made it as part of The Telegraph Fabulous Foodie competition all the way back in 2015. It was judged by none less than Xanthe Clay, John Gregory Smith and Jeremy Dixon and it took me to the grand final. So if you are still unsure as to whether you’ll like it, take it from them, not me, that it is good!

Give it a go, you won’t be sorry. Also, see below for an excellent way of using up left over ice cream and sauce.

Serves 4 to 6

For the ice cream:

1 x 225 g round of Isle of Wight Blue at room temperature

450 g double cream

1 ½ tbs icing sugar

In a bowl, break up the cheese as best you can and beat into it one third of the cream. You won’t be able to blend it in perfectly, but a little texture is no bad thing.

Sift the icing sugar with the reminder of the cream in a second bowl and whip until just slightly floppy, then fold into the cheese.

Freeze it in an ice cream churn if you have one. Alternatively, place in a tub, pop in the freezer and beat it with a small whisk every 20 to 30 minutes or so until it becomes too difficult; at that point you are done, and it can be left in the freezer until required. If you don’t want to freeze it, you can whip the cream a little more and use it like clotted cream.

For the pears:

4 to 6 unripe conference pears

500 ml red wine

100 g caster sugar

1 cinnamon stick

2 long peppers (or ¼ tsp black peppercorns)

¼ tsp ground ginger

Peel the pears, leaving the stalks intact. Slice the bottom so that the pear is able to stand up sturdily. If you have one, use a melon baller to remove the core from beneath.

Bruise the cinnamon stick and long pepper (or crack the peppercorns) and place in a pan with the wine and sugar. Put over a medium-low heat and stir to dissolve the sugar. Once dissolved, add the pears.

Bring to a simmer and cover the pan, turn down the heat and poach until tender. This will take around 20 minutes. The pears won’t be completely submerged, so to ensure an even colouring from the wine, turn them half way through cooking.

Remove the pears and set aside. They can be stored in the fridge for up to four days.

Now make the syrup: turn up the heat and bring the wine to the boil and let it reduce by around three-quarters or more, until viscous. Pour into a jug or jar and allow to cool.

To serve:

Remove the ice cream from the fridge around half an hour before you want to serve. Place a pear in the centre of a plate – it may need another trim at the bottom if it’s been in the fridge a day or two – and carefully spoon a couple of teaspoons of the syrup over the tip of the pear.

Place a biscuit next to the pear – I used a homemade digestive (post coming soon), but a hob-nob would also work very well – and place a scoop or quenelle of ice cream on top the biscuit.

Leftovers: there will probably be leftover ice cream and syrup, the latter of which keeps for weeks. Treat yourself to a very grown-up ice cream cookie sandwich using digestives instead of cookies, cheese ice cream instead of vanilla, and red wine syrup in place of raspberry sauce.

Summer Pudding

Summer pudding is one of the best and one of the most surprisingly versatile puddings there is. It’s also great fun to make and seeing as the first soft fruits crops are coming in, I thought I’d share my recipe with you. Before I do though, I should get the uninitiated up to speed on this quintessentially British dessert.

Summer pudding is typically a mix of red summer soft fruits lightly poached and set in a pudding basin that has been lined with berry juice-soaked white bread. For many, the thought of cold soggy bread makes them feel a little queasy, but they shouldn’t because the texture is not as one would expect; it is soft and giving and nothing like the texture of soggy bread in hot broth, for example. One way it is versatile, however, is that you can use other things in place of the bread, such as slightly stale slices of madeira or pound cake. Indeed, this is the way I prefer to make it because this way, you quickly dip the cake in the juices (otherwise it just breaks apart) unsoggy and much more pleasing in texture, rather like the base of a trifle, though a less vibrant colour. It’s swings and roundabouts isn’t it.

The other way in which it is versatile is in the fruit you can use. There are many who are purists who insist you use 100% raspberries, for others there must be at least 50% redcurrants, and some think there is no place for the strawberry. These people are all pudding fascists. I’m not picky and I go for what’s in season at the time: gooseberries, red, white or blackcurrants, blueberries, blackberries, strawberries, whatever.

The summer pudding goes back to the nineteenth century as far as I can see, the earliest mention of something resembling it popping up in an American publication from 1875. It describes a hot pudding consisting of currants and sugar steamed in a basin lined with bread. I’ve also found a British ‘midsummer pudding’ that is also hot but uses a suet crust and is – oddly – more recent. A cold pudding made in the manner we know and love today appears around the turn of the twentieth century under the curious name of ‘hydropathic pudding’, so called because it was introduced to ladies at health spas as a low-calory alternative to regular stodgy suet puddings.

I have also found other recipes for autumn pudding and winter pudding, that have swapped the summer fruits for stewed apples, pears and dried fruit or blackberries, sometimes switching white bread for brown.

This is my recipe and it makes just one small pudding, unlike most other recipes that make a giant one using a re-mortgage worth of redcurrants, so this is the recipe for those who do not grow their own. In fact, all you should need are two or three punnets of soft fruit.

Serves 4:

300 g ripe soft summer fruits (raspberries, blackcurrants, red or white currants, blueberries, strawberries, gooseberries etc)

80 – 100 g caster sugar

A shot of an appropriate liqueur such as Chambourd, optional

2 or 3 slices slightly stale bread, crusts removed, or one stale madeira or pound cake, cut into 7 to 10 mm slices

To serve: clotted cream or lightly whipped double cream

Rinse the fruit, cutting any large fruits such as strawberries and gooseberries into halves or quarters as appropriate. Scatter in the sugar, but don’t make things too sweet, especially if using cake rather than bread. However, if you are using green gooseberries you many want to shake in the full quota. Pour in the liqueur if using, stir, cover and leave to macerate overnight.

Next day, put the contents of the bowl in a saucepan over a medium heat. Stir gently to dissolve the sugar, trying not to squish the fruit too much. When dissolved, bring to a boil and simmer gently for two minutes, then turn off the heat. Set aside to cool down.

Cut your slices of cake into enough pieces to line a 450 ml / 1 pint pudding basin. I cut rectangles that taper slightly at one end so that they fit nicely.

Dip each piece of cake or bread in the juicy warm fruit and press into the inside of the basin. Repeat with more slices until you have covered the sides, then cut a circle to fit in the bottom. Be careful if using cake at this point as they are prone to break when soggy.

Now spoon the fruit mixture into the pudding, packing everything in well with the back of a spoon.

Cut more cake or bread to make a lid, press down hard with fingers, then place a saucer on top with a suitable weight and place in the refrigerator overnight.

When ready to serve, loosen the pudding a little with a knife before inverting it on a plate. Be patient as the pudding leaves the mould – do not be tempted to hurrying things, lest disaster strikes. If using a plastic basin, massage it a little to help it along.

Serve with any remaining juice or fruit and the cream.

Baked Gooseberry Pudding

The last in a quartet of gooseberry posts – I promise I will change the subject next post.

In my honest, humble opinion this is the best gooseberry dessert recipe. It’s old-fashioned and simple to make – gooseberries are baked with a little brown sugar and a knob or two of butter, all covered in cake sponge. The berries are still very sharp and are perfectly balanced with the warm, sweet sponge. This is much more superior to the better-known Eve’s pudding – stewed cooking apples covered in sponge cake. I suspect this would work excellently with blackcurrants.

This recipe crops up in my traditional English or British cookery books, but I first heard of it from Jane Grigson (as I have many dishes) in her book English Food.

For the pudding, you can make any amount of topping, it’s dependent upon whether you like a thin or thick layer of sponge and the dimensions of your baking dish. I used a soufflé dish of diameter around 7 inches/18 centimetres. I think this is a good amount for this size, and for most family-sized dishes.

The sponge is made using the all-in-one method, so make sure your butter is extremely soft to ensure a light topping.

2 tbs Demerara or soft light brown sugar

a couple of knobs of salted butter

gooseberries, topped and tailed

100 g very soft, salted butter

100g self-raising flour

100g caster sugar

2 eggs

Set your oven to 180°C.

Scatter the sugar and dot the butter on the bottom of your baking dish and cover with the gooseberries; you are aiming for a generous single layer of them.

Place the butter, flour, caster sugar and eggs in a bowl and beat together with an electric mixer until the mixture is smooth and well-combined. Using a large spoon or spatula, add the cake batter in big spoonfuls over the gooseberries and level it, you don’t have to be very neat here, the baking batter will flatted itself out.

Place in the oven and bake for around an hour until the top is a deep golden-brown colour.

Serve immediately with custard or lightly-whipped cream sweetened with a little icing sugar.

Blancmange

Last post I wrote all about the mediaeval dish Blanc Mange, an almond and rice stew served with chicken or fish. Obviously, I couldn’t let the opportunity pass to give you a recipe for the dessert blancmange we know and love (or hate).

Blancmange went from a savoury to a sweet dish somewhere around 1600 – 1604 is the earliest recipe for it I can find that sounds like the pudding we eat today.

When one thinks of blancmange, a shuddering over-sweet pale pink mass doused with cloying raspberry flavouring is imagined. This is not a proper blancmange. When I make one, I go back to basics.

Blancmange should be a simple affair: cream, milk, sugar and almond extract set with gelatine. In the recipes from earlier than the 20th Century, the gelatine would have been prepared in house from calves’ feet or pigs’ trotters. There was an alternative setting agent called isinglass which is made from the dried swim bladders of fish.

By the way, the pronounced almond flavour of almond extract is not supposed to emulate that of regular almonds, but of bitter almonds which were high in cyanide and therefore used in small, highly aromatic doses. Other things were sometimes added to this basic mixture: lemon zest, cinnamon, brandy and rose water all crop up in recipes through the centuries.

The blancmange went rather downhill once you could buy it in packet form. The almond extract or bitter almonds replaced with almond flavouring and instead of gelatine, cornflour was used. This is the dessert that many people hate. I must confess to quite liking the preparatory blancmange, but then, I’ll eat anything. It shouldn’t be called blancmange though, as it is quite a different beast; fake flavour and thick cornflour base making the final pud less jiggly and delicate. I suppose that after the realisation you could set custard with cornflour instead of egg yolks, the ‘magic’ formula was applied to blancmange.

I like to serve blancmange with a compote of cherries flavoured with a dash of kirsch and some delicate shortbread biscuits, but it is pretty good served all on its own. Who needs panna cotta!? If you want to turn the blancmange out of its mould, it is worth brushing the inside with a thin layer of sunflower oil so that it is easier to turn it out.

Makes 600 ml:

250 ml whole milk

gelatine leaves (see method)

100 g caster sugar

300ml double cream

1 tsp almond extract

Heat up the milk in a saucepan and as you wait, soak the gelatine leaves in cold water – check the instructions in the packet and use the correct number to set 600 ml except use one leaf fewer than instructed – you want a good wobble.

When the milk is very hot, squeeze out the excess water from the gelatine and whisk it into the milk along with the sugar. Once dissolved, add the double cream and almond extract. Pour into your mould or moulds, cover with cling film or a plate and refrigerate overnight. If you like, you can whip the cream until floppy and stir it through the milk when it is just warm. This way you get a mousse-like consistency – good if you want to serve it at a dinner party.

To turn out the blancmange, dip the moulds in hot water for around 10 seconds. To make it release you may have to carefully coax the blancmange from the inside edge of the mould with your finger; if you can move it away easily, it should come out. Place a serving plate on top and quickly flip it over – the blancmange should release, if not, simply dip it in the water for a further 10 seconds.

Once turned out, you may find that some of the blancmange has melted, so tidy up the plate with a piece of kitchen paper before serving.

Medieval Rose Pudding (Rosee)

Last post I wrote about my little experiment making almond milk. With my batch I decided to make a mediaeval recipe from the first cook book in English, Forme of Cury. It was written around 1390 by the cooks of King Richard II; I’ve written about it and cooked up a few recipes from it before.

The one I chose is called Rosee, and it is like a pudding – in the American sense of the word – i.e. a thick custardy dessert. This one is thickened with rice flour instead of eggs like a regular custard and is flavoured with rose petals (“with flours of white rosis”) as well as some ginger and cinnamon. It’s not the right time of year for roses, so in lieu of the blooms, I used some rose water instead. It’s also flavoured with pine nuts and dates, which also adds a little texture. Sugar is the sweetener – which wasn’t refined to pure white in the 1400s, so I used soft light brown sugar to replicate this.

You don’t have to use mediaeval almond milk, you can buy it, or just use regular cows’ milk.

Here’s how it is written in Forme of Cury. It’s hard to decipher, but once you know the now defunct letter thorn (þ) is makes a th sound (so seþe is pronounced seethe), it makes it a lot easier.

Rose Pudding 1390:

Take thyk mylke; seþe it. Cast þerto sugur, a gode porcioun; pynes [pine nuts], dates ymynced, canel [cinnamon], & powdour ginger; and seeþ I, and alye [mix] it with flours of white rosis, and flour of rys. Cole it; salt it and mess it forth. If þou wilt in stede of almaunde mylke, take swete crem of kyne [cows].

Hopefully you get the gist – it takes a while to tune in!

I didn’t follow the method exactly – I used my own cook’s logic to the dish – but I made quite a delicious pudding, and it didn’t feel as though it was a vegan dessert. A knob of butter or a glug of cream, goes a long way with making food satisfying, but I genuinely didn’t miss them. It really goes to show that the King and his court did not go without during Lent!

Rose Pudding 2019:

Makes 4 to 6 puddings

25g rice flour or cornflour

¼ tsp each ground ginger and cinnamon

250 ml mediaeval almond milk, bought almond milk or full fat milk (or a mixture)

60 g soft light brown sugar

Pinch salt

50 g chopped dates, plus extra for decoration

25 g pine nuts or chopped mixed nuts, plus extra for decoration

2 to 3 tbs rose water

Put the flour and spices in a small saucepan and whisk in the milk, starting by adding just a third of it at first to prevent lumps. When all of the milk has been added, put the pan on the heat and bring to a simmer, stirring well with a wooden spoon or small whisk as it begins to thicken. Add the sugar, salt, dates and nuts. Keep it simmering very gently for around 10 minutes to cook out the flour. If it looks like it will be too thick, add more liquid (it sets quite firm, so when it is hot, you’re looking for the consistency of thick double cream).

Remove from the heat and add the rose water – I like quite a lot, but it can be rather overpowering, so add enough that seems just right and then add a shake more. By doing this you are compensating for the fact it will be served cold, the flowery aroma less pungent.

Pour into serving cups – I went for small coffee cups – scatter with a few more dates and nuts and cover with cling film to prevent a skin forming. Pop them in the fridge until set.

Half an hour before you want to serve them, take them out of the fridge to take off the chill.

Fourth Course: Cucumber, Mint & Gin Sorbet

The fourth course jumps ahead somewhat to the Edwardian Age; a time of real food opulence (I’ve mentioned it before in this post here). Domestic ice cream machines were rather fashionable in the houses that could afford to buy one and to pay the staff to hand churn it. It was essentially a drum that could be encased in a mixture of ice and salt, which would drop the temperature enough to freeze the ice cream or sorbet reasonably efficiently. The contents would be churned so that only small ice crystals formed, giving the ice that soft and creamy texture we all know and love.

Although ice cream had been eaten for many decades previously, during the early Twentieth Century the flavours were much more savoury than today. I chose this cucumber, mint and gin sorbet as I thought it would make a lovely refreshing little respite in amongst the other, larger courses, but I could just as easy have gone for pear and Stilton, tomato or Parmesan, to name but a few. I absolutely love making sorbets and ice creams – in all of the menus I have put together I’ve always found space for some.

As soon as I’ve written up all of the courses, I will write a post on the history of iced desserts in Britain.

This recipe makes around 1 litre of sorbet:

1.5kg cucumbers, peeled and deseeded weight

50g mint (i.e. a decent bunch)

Juice of 4 lemons

150g icing sugar

100ml gin, warmed

In a blender, blitz the cucumbers, mint and lemon juice, and then pass through a sieve. Dissolve the icing sugar in the gin and add to the cucumber mixture.

Freeze in your ice cream churn as normal. If you have no churn, pop in the freezer, beat every 30 or 45 minutes until almost frozen, and then leave to freeze properly.

Make sure you remove the sorbet from the freezer around 30 minutes before you want to eat it.
